Lacto-fermented for at least four months in Brunswick then made with our premium extra virgin olive oil, it's luscious, complex and utterly delicious. They’re masters of lacto-fermentation – the wild and glorious process that turns a humble mix of tomatoes, chilli, onion, garlic and spices into something much greater than the sum of its parts. Over a period of at least four months, friendly bacteria feast on natural sugars, producing lactic acid that preserves the ingredients and unlocks deep, tangy, complex flavours you just can't get any other way.

Behind the Scenes
The making of a fermented evoo tomato sauce

We partnered with Ultra Culture in Brunswick, experts in wild lacto-fermentation and renowned mad hot sauce scientists.

A special blend of locally sourced tomatoes, garlic, onion, chilli and spices are blended and prepared with salt for anaerobic lacto-fermentation. This is where the fun begins.

We leave this “mash” to sit for at least four months in a temperature controlled environment. In the depths of the barrels a funky, sweet and spicy flavour develops. We don’t rush this so that the sauce gets the full depth of this transformation.

You won’t find many tomato sauces made with premium extra virgin olive oil. The addition of our delicious Smooth extra virgin olive oil makes this into something very different and much more versatile. It’s luscious and creamy and rich. Goes on a snag as well as it goes on as a ready-made pasta sauce.
