Watermelon & Feta Checkerboard

POV you’re in the middle of an Aussie summer heatwave.
It's fresh, it's vibrant and it's a flavour combination we're now obsessing over. The sweetness from the watermelon and saltiness from the feta is a match made in heaven.
Watermelon & Feta Checkerboard
Ingredients
Watermelon
Feta (we used Danish feta)
Cucumber
Mint leaves
Smooth Olive Oil
Method
1. Chop the watermelon and feta into even sized cubes.
2. Chop the cucumber so it's the same height as the watermelon & feta.
3. Plate your cubes following a checkerboard like pattern.
4. Drizzle a generous amount of olive oil
5. Top with fresh mint leaves
