Spaghetti Bolognese

Sorry Nonna’s everywhere, this is the best bolognese you’ll ever have. It’s the kind of bowl that you’ll go back not for seconds, but thirds.

The best bolognese you’ll ever make

Twist your pasta night!

Ingredients

  • 3x garlic cloves, minced

  • 1x brown onion, diced

  • 4x heirloom tomatoes, diced

  • 3-4x flat mushrooms, diced like mince

  • 1x zucchini, grated

  • 1x can diced tomatoes

  • 1x can lentils

  • 1/4 cup tamari (or red wine)

  • Smooth evoo

  • Salt & pepper

  • Italian herb blend or fresh thyme/basil/oregano

  • Pasta!!

Method

  1. Prep all ingredients and boil water in a large pot for your pasta.
  2. Sauté garlic and onion until the onion is translucent before adding diced mushrooms.
  3. The trick is to let the mushrooms soften and release their juices because their flavour is key!! Once the mushrooms have released water add Italian herbs, salt and pepper.
  4. Add heirloom tomatoes, tomato sauce and tamari. Let them simmer for a couple of minutes.
  5. Add canned tomatoes, lentils and zucchini. Let the sauce simmer until all veggies are soft. Honestly, the longer the better (we let it simmer for a couple of hours, adding small amounts of veg stock if needed)
  6. Cook pasta as instructed on the pack.
  7. Serve with a generous amount of parmesan and enjoy!

This made enough pasta sauce for 6-8 meals. So it’s great for sharing and meal prepping!
