Roast Tomato & Stracciatella

Of course we've been taste testing Super Early Harvest on just about everything...and we're still thinking about this recipe from our campaign shoot. Sweet and juicy roast tomatoes with garlic on cold stracciatella with fresh EVOO drizzled all over. Heaven on a plate.

Roast Tomato & Stracciatella
Ingredients
Cherry tomatoes tossed with a handful of fennel seeds, some strips of lemon peel and a pinch of brown sugar
Garlic bulb
Stracciatella
Salt & pepper
Fresh sourdough or focaccia for serving
Method
- Roast the cherry tomatoes & garlic with salt, pepper and a drizzle of smooth olive oil until the tomatoes are blistered and garlic is golden.
- Pour a generous drizzle of ‘Super Early’ EVOO on top of stracciatella
- Place cherry tomatoes on top of stracciatella with another drizzle of ‘Super Early’ EVOO
- Serve with fresh focaccia or sourdough & enjoy!
