Method

  1. Mixing the Dough: In a large mixing bowl, combine the flour, salt, and sugar. Sprinkle the instant yeast over the mixture, then pour in the lukewarm water and 2 tablespoons of the olive oil. Stir everything together with a wooden spoon or your hands until a sticky dough forms. No need to knead—just mix until well combined. Cover the bowl with plastic wrap or a damp kitchen towel and let it rest at room temperature for about 1 to 1.5 hours, or until the dough has doubled in size.
  2. Prepping the Pan: Drizzle 2 tablespoons of olive oil onto a 9x13-inch baking pan, spreading it evenly to coat the bottom. Carefully tip the risen dough onto the pan, trying to deflate it as little as possible.
  3. Stretching the Dough: Use your fingers to gently press and stretch the dough to fit the pan. If it resists stretching, let it rest for a few minutes and try again. Don’t worry if it’s not perfectly even—rustic is beautiful!
  4. Final Rise: Cover the pan with plastic wrap or a damp kitchen towel and let the dough rise again for about 20-30 minutes.
  5. Adding Toppings: Preheat your oven to 220°C (428°F). Uncover the dough and use your fingertips to create dimples all over the surface. Drizzle the remaining olive oil over the top, letting it pool in the dimples. Sprinkle coarse sea salt and, if desired, fresh rosemary leaves over the dough.
  6. Baking: Place the pan in the preheated oven and bake for 20-25 minutes, or until the focaccia is golden brown on top.
  7. Cooling and Serving: Once baked, remove the pan from the oven and let the focaccia cool slightly before slicing. Serve warm or at room temperature, and consider pairing it with extra olive oil and balsamic vinegar for dipping.
