Pan Seared Rockling with Salsa Verde

Ingredients

Salsa Verde

  • 2x garlic cloves

  • 2x handfuls of fresh parsley

  • 1x bunch fresh basil

  • 1x handful fresh mint

  • 2x tablespoons capers

  • 2x gherkins

  • 1x tablespoon dijon mustard

  • 8x tablespoons Waxflower EVOO

Pan Seared Rockling

  • 1x fillet of Rockling or white fish of your choice

  • Salt & Pepper

Method

1. Blend all Salsa Verde ingredients until well combined. Depending on your blender you may need to add extra oil.

2. Season fish with salt and pepper (we sliced the fillet into 3 pieces prior to seasoning)

3. Heat a pan on low heat and drizzle some waxflower oil. Place the fish in the pan and cook on low heat until golden.

4. Cook the other side of the fish until golden.

5. Transfer to a serving plate and cover with a layer of salsa verde. Serve with a salad or roast veggies.

If the fillet of fish is thicker, cover the pan with a lid for a couple minutes to ensure the centre cooks.
