Goldi Edition
Herb Oil
Ingredients
A bunch of mixed herbs (we used chives, thyme, basil & dill)
Approx. 2 cups Smooth Extra Virgin Olive Oil
Method
- Blanch herbs in boiling water for approximately. 10 seconds
- Transfer herbs into bowl of iced water to cool. This keeps the herbs a vibrant green.
- Once cooled, dry herbs with paper towel.
- Blend herbs with 2 cups olive oil.
- Strain in a cheese cloth for a couple hours. Don't squeeze the herbs, let gravity and time do its thing.
- Once oil has strained, transfer oil into your favourite glass bottle.
Drizzle on whipped ricotta & focaccia, eggs, cocktails, pasta or anything really!
