Herb Oil

Let’s make herb oil! Have you got left over herbs in the fridge? If so, don’t let them go to waste & make fresh & vibrant oil to elevate the most basic of dishes. All you need to do is blanch, dry, blend, strain & drizzle.

Ingredients

Method

  1. Blanch herbs in boiling water for approximately. 10 seconds
  2. Transfer herbs into bowl of iced water to cool. This keeps the herbs a vibrant green.
  3. Once cooled, dry herbs with paper towel.
  4. Blend herbs with 2 cups olive oil.
  5. Strain in a cheese cloth for a couple hours. Don't squeeze the herbs, let gravity and time do its thing.
  6. Once oil has strained, transfer oil into your favourite glass bottle.

Drizzle on whipped ricotta & focaccia, eggs, cocktails, pasta or anything really!
