Goldi Cooks! Peach Pan Con Tomate With Dom Wilton

Peach Pan con Tomate
Ingredients
2 ripe tomatoes
1 peach
2 slices of sesame bread
100g of stracciatella
4 anchovies
Champagne vinegar (a splash)
1 Tbsp of Goldi Smooth Olive Oil
Goldi Chilli Agrumato (to taste)
Salt
Method
In a mixing bowl, grate tomatoes and season with salt, Goldi Smooth olive oil, and Champagne vinegar. Then finely dice ripe peaches and add to tomato mixture and let marinate while you assemble the remaining components.
Toast two slices of bread to your desired crunch (I recommend quite toasted to withstand the tomato mixture). Once toasted, let bread cool to a tepid temperature and top each slice with half the stracciatella.
Pile each slice with the tomato mixture, then drape two anchovies over each piece and drizzle with Goldi chilli agrumato.
