Goldi Cooks! Ful Bi Zeit with Francis Hadid

Melbourne chef, Francis Hadid, shares with us her take on one of her favourite dishes that champion seasonal broad beans.

  • 1kg fresh broad beans

  • Fresh mint

  • Coriander

  • Parsley

  • Wild garlic

  • 2 green tomatoes (red is also fine)

  • A drizzle of Tahini

  • Smooth olive oil

  • Lemon agrumato

  • Salt

Method

Find a sunny spot, ideally outside, and start shelling the fresh broad beans. Blanche the beans in a pot of salted boiling water to soften the second layer of skin, then transfer to cold water. Set aside.

Crush the garlic cloves and slice the wild garlic. Chop the herbs. Cut the tomatoes.

Heat a pan with a good amount of smooth extra virgin olive oil. Fry the tomatoes and garlic, then add the broad beans and toss until slightly golden. Add the chopped herbs, turn off the heat, and finish with lemon agrumato and salt. Drizzle with tahini, plate it up, and enjoy it back in that sunny spot.
