Almond & Blueberry Banana Bread

Nothing says good morning like a warm slice of banana bread served with a warm cup of coffee

Almond & Blueberry Banana Bread

Ingredients

Dry

  • 2 cups almond flour

  • 3/4 cup buckwheat flour

  • 1tsp baking powder

  • pinch sea salt

Wet

  • 3 ripe bananas, mashed

  • 1/4 cup almond milk

  • 1/4 cup smooth extra virgin olive oil

  • 1/4 cup almond butter

  • 1/2 cup maple syrup

  • 1tsp vanilla extract

Toppings

  • frozen blueberries (to line the bottom of the tray)

  • 1 banana, sliced in half

  • almond flakes

  • 1tbsp strawberry coconut yoghurt or melted butter

Method

1. Preheat your oven to 180 degrees C. on the conventional setting

2. Mash banana and mix all wet ingredients until well combined

3. Combine all dry ingredients

4. Add wet ingredients to dry ingredients and mix until well combined

5. Line a bread tin with baking paper & place blueberries in the tin to cover the bottom. Pour your banana bread mixture.

6. Cut a banana in half and press into the top of the mixture. Scatter sliced almonds on top and place in the oven for 45 minutes or until the centre is cooked and the top is slightly golden (poke a sharp knife into the centre and if it comes out clean it's ready)

7. Serve with a dollop of berry coconut yoghurt or melted butter
